Fried Eggs with Tomatoes (番茄炒蛋)
- 2-3 eggs
- 2-3 medium tomatoes
- 3 green onions
- 1 tbsp olive oil
- 1/2 tsp salt
- ginger (optional)
- Beat eggs
- Chop up tomatoes and green onions
- Heat oil in pan
- Pour eggs into the pan and cook slightly
- Add tomatoes and cook while stirring, until soft
- Mix in salt and green onion
Serve and enjoy!
