The picture of this homemade dish appeared on the “For the Love of Chinese Food” page on Facebook. Once I saw that picture of Fried Rice, I just knew that I had to have the recipe! And with Mee Soo’s permission, we reprint it here for your edible enjoyment!
Ingredients:
- Day Old Rice*
- Peas
- Carrots
- Green Onions
- Scrambled Egg
- Cut up Shrimp
- Tiny Squares of Pork Roast
- Soy Sauce
Directions:
- Cook the rice to warm it up
- Add in all the ingredients
- Put the shrimp in last
- Cook on a medium heat for approximately 20 minutes – Use the sniff test to determine cooking time. When it smells good, you know it’s eating time!!
*Why use day old rice?
While the first step in making fried rice certainly involves cooking rice, the timing of it is what’s important. In this case, fresh isn’t actually better. If you start with sticky, warm, just-cooked rice, your fried rice will turn out soggy, without those distinct chewy grains that a good fried rice has.
Instead, cook the rice at least a day ahead of time and refrigerate. This helps to dry the grains out enough to give your fried rice a good texture.

Well, wouldn’t know. I’ve learned to cook fried rice from my Chinese flat mate when I lived in dublin, and she used freshly boiled rice, so that’s what I do too. And it it good 🙂
But everybody have their secret, I suppose 😉
