Zucchini Noodle Lo Mein Recipe: An Irresistible Chinese Recipe You’ll Always Love

Lo Mein is a Chinese dish that is traditionally made with wheat flour noodles. Most of the time, a Lo Mein recipe contains a variety of vegetables and certain types of seafood and meat, usually pork, chicken, beef, wontons or shrimp. It can also be eaten with plain vegetables only.

I’ve always been a fan of Lo Mein. It’s actually one of the best Chinese foods I have tasted so far as it would taste even better the following morning when it’s cold. I am quite sure that many of people around just like you consider this food as ab after-college hangover staple.

Now that I am already in the 30’s, a business woman, I have made it a point to step up my Lo Mein recipe with something that’s much healthier than the other versions I have tasted before. This time, I will be using  zucchini noodles instead of the traditional wheat flour noodle.  To learn more about zucchini noodles, click here.

On the brighter side, Lo Mein simply means noodles that are being stirred, such as the famous stir fried noodles. This is what exactly what this recipe is all about: spiralized noodles that are stir fried and added with pork for a more appetizing and delectable treat on the table.

If you are a vegetarian folk then you can set aside the meat slicer and substitute pork with friendly protein like tofu, edamame, tempeh or some quinoa. And if pork is an absolute No at your end then you can try shrimp which is simply a top choice of many Lo Mein enthusiasts. Personally, I love all what’s been enumerated here especially pork, beef and chicken that have been cooked in a pellet grill.

These simply save well in the fridge, too. You may just want to toss them a little right before serving and add a little soy sauce upon serving. You have to do this because soy sauce easily thins out due to the moisture released by the zucchini noodles.

Zucchini Noodle Lo Mein with Pork

If you are meal planning and preparing for today’s Lo Mein feast, then have those veggies spiralized in advance and cook the pork so that your recipe is ready to be cooked several minutes before you have it for dinner. Believe me this simple Chinese recipe will only take ten minutes of your time to cook it.

  1. Heat the sesame oil in a large skillet over medium heat.
  2. Add pork strips when the oil starts to shimmer. Season it with pepper and salt. Adjust the taste by putting a small amount of salt at a time until you get the desired taste. Continue cooking the pork until turns light brown. This may take about ten minutes.
  3. While cooking the pork, you should start preparing the sauce. Add and combine all ingredients, whisk and set aside.
  4. When pork is done, set it aside and return the skillet over medium fire.
  5. Put garlic, ginger and white scallion into the skillet and cook until they become fragrant. This may take about a minute.
  6. Put the mushrooms and chicken broth and cook it until soft.
  7. Add bell pepper and carrots and cook them until tender
  8. Add the zucchini noodles and toss.
  9. Add cook pork and sauce and continue cooking it for about 3 minutes or until the desired softness of the noodles is achieved.
  10. Divide the Lo Mein into plates or bowls and garnish them with sesame seeds and the green parts of the scallions.
