Reduce the heat to low, cover, and let it simmer for at least 30 minutes to infuse the flavors. The longer it simmers, the richer the broth. * Strain the broth through a fine-mesh sieve, discarding the solids. Return the clear broth to the pot. * Stir in the soy sauce, sesame oil, and white pepper. Taste and adjust seasoning. Add an optional pinch of sugar if the broth needs a touch of sweetness to balance. Keep the broth at a gentle simmer.

2. Prepare and Cook the Matzo Balls: * While the broth is simmering, prepare the matzo ball mix according to package directions. Typically, this involves combining the mix with eggs, oil (or schmaltz), and salt in a medium bowl. If using, stir in fresh dill or parsley. * Cover the bowl and refrigerate the mixture for 15-20 minutes. This helps the matzo balls hold their shape. * Using wet hands, form the mixture into balls about 1 to 1.5 inches in diameter. You can make them larger if you prefer “sinkers” or smaller for “floaters.” * Carefully drop the matzo balls into the simmering broth. Ensure they are submerged. * Cover the pot and simmer for 20-30 minutes, or until the matzo balls are cooked through and fluffy. They will expand significantly. Do not overcrowd the pot; cook in batches if necessary, or use a separate pot of salted water to cook the matzo balls before transferring them to the broth.

3. Add the Egg Drop: * Once the matzo balls are cooked and the broth is gently simmering, bring the broth to a slightly more vigorous simmer (not a rolling boil). * Stir the cornstarch slurry to recombine. Slowly pour the slurry into the simmering broth while stirring continuously to thicken it slightly. This helps the egg wisps hold their shape better. * With the broth still simmering, slowly drizzle the lightly beaten eggs into the soup in a thin stream, stirring gently in one direction with a fork or chopsticks. This creates the classic delicate egg ribbons. * Cook for about 30 seconds more, until the egg is set. Do not overcook, or the egg will become tough.
