Fish with a firm texture are best prepared fried.  Some fish taste better when steamed, especially those that are light and delicate.  Commonly fried fish are porgies; they are available in various markets.

Clean the fish properly and sprinkle it with salt.  Leave it to set for about 15 minutes before placing the whole fish in a medium-high heated wok.  A wok is a pan used by the Chinese.  Adjust the heat to preferable levels without burning the fish.

It should form a little crust on it.  For slightly more flavor on the fish, add Shaoxing Wine around the perimeter of the wok and let the fish cook for 30 seconds.  You can then add soy sauce mixture and chopped scallions to the mix.

Serve with the meal of your choice, and you’ll be in for a very tasty treat.

You can have the dish with noodles and bean sprouts which you add to the mixture in your wok.  Toss the mix to combine the ingredients for 2 minutes then toss again.  When the noodles get cooked, you can serve the dish and have a mouthwatering delight.
