Stir-frying dishes is, in my opinion, one of the most tasty ways to prepare food. For those of you that don’t know, stir-frying is a Chinese cooking technique that involves cooking a variety of ingredients in a very hot wok with oil. It’s a super quick way of making a delicious dish and the technique itself is able to lock in the moisture and flavor of the ingredients, as well as maintain their color and texture. The high heat of the wok will ensure that the food is cooked quickly, keeping the vegetables crispy and proteins perfectly browned. As an added bonus, if you have a cast iron or carbon steel wok that’s properly seasoned, it can impart a truly delicious wok flavor into your food that you simply won’t find anywhere else.

When it comes to great stir-fry recipes, chicken stir-fry is one the most popular in Asian countries as well as Western ones. One of the reasons being it has so many variations and can easily be adapted to whatever you might have on hand that day. The chicken meat is incredibly tender when stir-fried, and combines well with nearly any vegetables you can think of. This is also a great recipe for getting rid of any extra veggies that are about to go bad, but you don’t want to let go to waste.

The specific recipe I’ll be going over today is a delicious and easy Paleo Chicken & Broccoli Stir Fry. If you aren’t familiar with the Paleo Diet, it’s not so much a “diet” as it is a framework for eating. Think lots of fruits, vegetables, meats, seafood, and nuts while eliminating wheat, gluten and dairy. The diet reduces the body’s glycemic load, has a healthy ratio of saturated-to-unsaturated fatty acids, increases vitamin and nutrient consumption, and contains an optimal balance of protein, fat, and carbohydrates. However, whether you adhere to the Paleo diet or not, this stir-fry dish is amazing and has become a staple in our household over the years. You simply can’t beat the straightforward and healthful ingredients. The combo of chicken and broccoli is perfectly filling without be too heavy. Best of all, this recipe is great for preparing on the fly and a lifesaver on those busy weeknights.

Paleo Chicken And Broccoli Stir Fry

Easy Chicken And Broccoli Stir Fry

 Serves: 3-4 people

Ingredients

  • 2 tbsp Extra virgin olive oil
  • 1 lb Boneless skinless chicken breasts (cut into 1-inch pieces)
  • 1 Red bell pepper (thinly sliced)
  • 1/2 yellow bell pepper (thinly sliced)
  • 2 Carrots (small, peeled and diced)
  • 1 White onion (small, thinly sliced)
  • 1/2 Head of broccoli (cut into florets)
  • 3 cloves garlic (minced)
  • 1/2 tsp fresh ginger (grated)
  • 1 tbsp Coconut aminos
  • 1 tsp Sesame oil
  • Salt and pepper (to taste)
  • Sesame seeds (for garnish)

Instructions

  1. Heat the olive oil in a large skillet until it starts to shimmer.
  2. Season the chicken with salt and pepper and add to the pan.
  3. Cook until browned.
  4. Stir in the peppers, onion, and ginger and sauté for 4-5 minutes.
  5. Add the broccoli and garlic and cook for an additional 3-4 minutes.
  6. Drizzle with coconut aminos and sesame oil and stir.
  7. Garnish with sesame seeds and serve warm.
